But, homemade cakes are the best, no matter what, they taste different and the best thing is that you can keep a check on the quality of the ingredients which are used. A plain, simple and easy pressure cooker cake recipe made using basic ingredients like maida, sugar, butter, a vanilla extract made without an oven.

Basic Ingredients: To make the sponge cake batter:

4 eggs

1 cup powdered sugar

1 cup maida/all purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup melted butter

1/2 tsp vanilla extract
other ingredients

1/4 tsp butter to grease the pan

1 tsp maida to flour the pan

1 and 1/2 cup sand to create a base at the bottom of the pressure cooker

Recipe Notes:

1. Overcooking the cake makes the cake dry by losing the moisture… The cooking time of the cake should be between 50 minutes to 60 minutes and not more than that.

2. The whistle of the pressure cooker should be taken out while baking the cake.

3. If sand is not available, salt can also be used

Basic Method:

  • Take a large pressure cooker and remove its rubber ring and whistle. Put sea salt at the bottom of the cooker and spread it evenly. Place it uncovered over a low flame
  • Next, grease a baking pan with butter and keep it aside. In a large mixing bowl, add all-purpose flour, condensed milk, sugar, water and melted butter. Whisk them nicely
  • Now, add vanilla essence and baking powder in the cake batter and mix again. When the batter is smooth and has no lumps in it, pour it in the baking pan and shake it gently
  • Now, place the pan carefully over the sea salt inside the pressure cooker and put on the lid. Keep the flame at a low setting and bake for 40 minutes
  • After 40 minutes, check if the cake has baked completely by putting a skewer in the cake if it comes out dry, the cake has baked else, you can bake it for few more minutes

Now, Wear gloves and take the cake out of the cooker carefully. Turn it upside down on a plate and tap the bottom, your cake will come out of the baking pan. Serve warm or cold, that’s your choice! So, this was a simple method to make a spongy cake without an oven. One can make cakes for birthday’s and occasions too by this method.
